This is not roast chicken, fried chicken, or a heavily spiced braise. The seasoning is deliberately light, so freshness and texture are easy to judge. At a Shanghai meal it is often one of the first shared dishes on the table, especially when diners want a cool, clean contrast before richer hot dishes arrive.

How to Recognize a Good Plate

Look for neatly cut bone-in pieces with golden-yellow skin and moist, pale meat. The skin should look smooth and lightly taut, not dry or rubbery. Where the knife cuts through, a translucent layer of jelly can appear between skin and meat. That is a useful sign of careful poaching and cooling, not a flaw.

How It Is Served

The usual accompaniment is light soy sauce with scallion oil and sometimes ginger. Dip rather than pour: the sauce is there to frame the chicken's own flavor, not cover it. Because the dish is served cool, it works best early in a meal while the texture is at its cleanest.
