Shanghai deep-fried pork chop, or zha zhu pai, is a broad, thin pork cutlet with a deep-golden crumb and a tender center. It appears in Haipai restaurants, neighborhood noodle and wonton shops, and family kitchens, where it is usually sliced into strips before serving.
The essential condiment is la jiang you, Shanghai's local version of Worcestershire sauce. Despite the literal name "spicy soy sauce," it is not soy sauce. Its light acidity, mild sweetness, and faint spice cut through the fried crust without turning the dish into a heavily sauced main.
Haipai cuisine grew as Shanghai cooks adapted Western dishes to local ingredients and eating habits. Deep-fried pork chop became one of the familiar "three classics" of Shanghai-style Western food together with Shanghai borscht and potato salad. The result is recognizably Shanghainese rather than a direct copy of a European cutlet.
The standalone fried pork chop normally uses flour, egg, and fine breadcrumbs for a crisp shell. Paigu niangao usually uses a softer batter and serves the pork with chewy rice cakes and sweet sauce. A good menu photo should make that difference clear: this dish is about an open, sliced cutlet and a small dish of thin dipping sauce.
Some diners dip each strip lightly so most of the crumb stays crisp. Others pour a little sauce across the cutlet and enjoy the softer, tangier crust. In an old-style Western restaurant, a bowl of tomato-rich Shanghai borscht is the classic companion. At a casual shop, a lighter bowl from the Shanghai wonton menu can play the same balancing role.
The cutlet should be broad and relatively thin, with an even golden surface rather than a thick, dark shell. The meat should remain moist when cut, the crumb should not slide away in one sheet, and the plate should not be surrounded by excess oil. Use the sauce gradually so you can judge the crust before changing its texture.
